“The curd at this time of year feels beautifully silky in your hands. It’s an uplifting feeling and although it’s autumn, I have a spring in my step. We  work even harder at this time of year, usually 7 days a week, but it is a good feeling  knowing that we will have fantastic creamy cheese that we will be proud of for the winter months, and importantly for Christmas sales. There’s a long run of this quality of milk till February or March at least.”
